Mini Quiches

8 ounces small curd cottage cheese
1/4 cup sour cream
4 ounces shredded sharp cheddar cheese
1/2 cup buttermilk baking mix
1/4 cup melted butter
3 eggs
Add additional ingredients such as onion, bacon, mushrooms, etc as desired.
Preheat oven to 350 degrees.
Mix all ingredients with electric mixer.
Grease mini-muffin tins or use Teflon ones.
Fill 3/4 full.
Bake for 15-20 minutes or until brown.

May be frozen.
Reheat at 300 degrees or microwave for 3 minutes on high.

    I love mini quiches. They remind me of being young and trying to sneak into my parents’ parties and snag one off a tray. I would eat them until I was sick! :)
