valmg’s Deviled Eggs

deviled eggs

I make these for company and parties. They always disappear. They’re simple and easy to make, and very yummy.

You’ll need:
18 eggs
mayonnaise
yellow mustard
paprika

Boil your eggs.
Peel the eggs while still slightly warm. (I find them easier to peel that way.)
Cut the eggs in half.
Remove all of the yolks and place in a bowl.
Smash yolks.
Add mayonnaise to wetness desired. I like mine a little on the wet, creamy side.
Add yellow mustard to taste. I only add a little to add a little zip.
Spoon the yolk mixture into the empty egg halves.
Sprinkle paprika over the top.
Serve cold.

That’s the way I make them. Sometimes I add a little pickle juice to the mixture to give it a little zing. (Oh, I am one of those who prefers miracle whip over mayonnaise.)
