valmg’s Mashed Potato and Chicken Bowl

Ok, I had the KFC Mashed Potato Bowl for the first time about two years ago and fell in love. It is, however, expensive. So I decided to try and recreate it at home. I was very pleased with the resulting dish and have continued to make it, occasionally adapting it a little. The version I’m giving here is if you’re making it in a hurry, everything is cooked in the microwave. The ingredients are probably mostly ones that you have already. I have also made this dish using the stove and oven, but that takes longer and comes out a little differently.

You will need
a bag of frozen popcorn chicken
1 bag (8 oz) shredded cheddar cheese
1 can (14-16oz) regular corn, drained
1 can (14-16oz) creamed corn
a box of instant potatoes
2-4 jars or cans of your favorite chicken gravy
seasoning to taste

Start by making your mashed potatoes according to the microwave directions on the package. I recommend making them in the largest microwave safe bowl you have, because then you can put everything else in there instead of mixing them all together in another bowl. I have successfully used many brands of mashed potatoes, so use whatever you have or like. I usually make servings for between 8 and 10, because I like it so much I want leftovers.
When the potatoes are done I put them on the counter and microwave the chicken according to the directions on the package. I use half to an entire bag of popcorn chicken, but I cook it in two batches. When the first batch is done I stir it into the potatoes to check how much more chicken I want to add.
Now your mashed potatoes and chicken are getting stiff. Heat your gravy (I like to use Heinz because it’s in a jar so I can microwave it and it tastes food) and pour it over the mashed potatoes and chicken. The reason my ingredients say 2-4 cans or jars is because you may prefer more gravy than the next person.
Now heat your two corns in the microwave. If you don’t like creamed corn you can substitute another can of regular corn but it changes the taste just a little. When your corn is heated, stir it into the mashed potatoes and chicken in the bowl. If you need more gravy, add it.
Now open the shredded cheddar and sprinkle it over the whole bowl of mixed cooked ingredients. Stir it so it goes through the entire mixture.
That’s it. Serve.

It took making it a few times to get the timing and taste the way I wanted it. If you try it and sort of like it, try it again another time and adapt. Let me know what you think of it if you try it.

    I love this KFC product, as well. I’ve made my own version at home, in an attempt to save money. Instead of using popcorn chicken (which is a great idea, by the way) I fried chicken breasts and cut them into strips. YUM!
