Waikiki Meatballs
1 1/2 pounds ground beef
2/3 cup crackers — Crumbled
1/3 cup minced onions
1 egg
1 1/2 teaspoons salt 1/4 teaspoon ginger
1 tablespoon shortening
2 tablespoons cornstarch
1/2 cup brown sugar, packed
13 1/2 ounces pineapple chunks in light syrup — chopped very fine
1/3 cup vinegar
1 tablespoon soy sauce
1/3 cup green pepper — chopped
Mix meat, crumbs, onion, egg, salt, ginger & milk.
Shape mixture into balls by rounded tablespoonful.
Melt shortening in large skillet; brown and cook meat balls.
Remove meat balls and keep warm.
Pour fat from skillet.
Mix cornstarch and sugar.
Stir in reserved pineapple juice or syrup, vinegar and soy sauce until smooth.
Pour into skillet and cook over medium heat, stirring constantly, until mixture thickens and boils.
Boil and stir 1 minute.
Add meat balls, pineapple tidbits and green pepper.
Heat thoroughly.
Serves 6.
