Greyston Bakery Merry Minty Brownies Recipe

December 8 was National Brownie Day. In celebration the folks at Greyston Bakery offered this recipe to me to share.
Greyston Bakery Merry Minty Brownies
Ingredients:
- 8 oz. Good-quality chocolate (we use Belgian for Do-Goodies, but Ghirardelli or Scharfenberger will do)
- 1 cup Butter
- 5 Eggs
- 3 cups Sugar
- 1 tbs. Vanilla
- 1 tsp. Peppermint extract
- 1-1/2 cups Flour
- 1 tsp Salt
- 2-1/2 cups Walnuts, toasted (optional)
- 1 Paper Doily
- Confectioners Sugar for dusting
Preparation:
• Preheat oven to 375 degrees
• Grease a 9 x 13 pan
• Melt chocolate and butter in a saucepan over low heat
• Set aside
• In a mixer, beat eggs, sugar, vanilla and peppermint at high speed for 10 minutes
• Blend flour and salt into chocolate until mixed
• Stir in the nuts, if using
• Pour into prepared pan.
• Bake for 35-40 minutes
• Place doily over each cut brownie and sift confectioners sugar to create ‘snowflake’ pattern
• Serve

I love brownies but would probably substitute the mint with nuts.
