We go through a lot of rice in our house. Rice is one of the legal foods that CJ can have, as he has Celiac Disease. One of the things that can be a pain about cooking rice is that it can take a while to cook and it can stick or burn. I’ve had my rice come out badly on more than a few occasions because I hate to stand in the kitchen and watch and stir a pot of anything. I much prefer things that are easy to make and don’t require lots of work. Minute Rice is one of those foods.

I received a box of the Minute Brown Rice. I tried cooking it both on the stovetop and in the microwave. There seemed to be no discernable difference in taste but the microwave batch actually seemed a little bit more tender. I paired it once with one of the Tyson Heat ‘N Eat entrees, using that gravy over the rice and that was delicious.

I received a package of Minute Ready To Serve. These are perfect for anyone on the go or if you need to make a second side for some reason. In my house sometimes we want something CJ can’t eat and I have to make another side just for him so these are perfect at those times. To make it you just put one of the containers into the microwave for one minute and it’s ready. I just out a little butter on it for CJ.

valmg’s Ground Beef And Rice Casserole

This casserole is very filling and very heavy. I make it when I’m going to have a busy week so we have leftovers.
You’ll need:
- 1 pound ground beef
- 4 cups uncooked rice
- 1.5 cups of Shredded Cheddar Cheese
- 1 can Cream of Celery soup
- 1 container (16 oz.) sour cream
- 1 package onion soup mix
- Salt and pepper to taste.
Preheat the oven to 350 F.
Cook the ground beef.
Cook the rice.
While these are cooking add the onion soup mix to the sour cream and set aside.
Lay the cooked rice in a baking pan.
Stir in the can of cream of celery soup.
Add the ground beef into the baking pan.
Add one cup of cheese into the baking pan.
Stir the contents of the baking pan, mixing well.
Sprinkle the remaining half cup of cheddar cheese across the top.
Place in oven and bake for 15 minutes.

Serve with salt and pepper to taste.
This can be reheated in the oven or the microwave.
valmg’s Easy Chicken Broccoli Rice
- white rice
- 1 pound chicken breast
- 1 family size can cream of chicken soup
- 1 box frozen broccoli
- onion
- garlic
- pepper
Cook white rice. (I use a rice cooker.)
While that’s cooking I cook broccoli and chicken.
Then I add in cream of chicken soup and season to taste.
I stir them together with the rice.
Season to taste.
Then I add in some cheddar cheese, stir again and serve hot.
Sour Cream Rice
- 1 c. uncooked rice
- 1 lb. sharp cheese
- 1 pt. sour cream
- Crushed cayenne
- Salt to taste
- 2 tbsp. sugar
Cook rice.
In casserole dish, put a layer of this cooked rice.
Add half of the sour cream and sprinkle with sugar.
Grate cheese and spread a layer of this
over the sour cream.
Sprinkle this with crushed pepper.
Repeat, filling the casserole with two layers.
Bake at 350 degrees for 30 minutes until very hot and cheese is melted.
Serves 6.
Cheese And Rice Casserole

2 1/2 cups Brown Rice — cooked
3 Green Onions (scallions)
Chopped
1 cup Lowfat Cottage Cheese -or- Hoop Cheese
1 teaspoon Dried Dill
1/4 cup Parmesan Cheese — grated
1/2 cup Lowfat Milk
Combine all the ingredients in a mixing bowl.
Pour into a lightly oiled casserole.
Bake in a 350-degree oven for 15 to 20 minutes.
Serves 4.
