Tempeh Mercon Tofu Recipe

Mercon, melet, hot jeletot, glaring, jontor and so on are various terms that describe foods with super spicy taste, not to mention tempeh and tofu in chili content this time. Simple because it uses tofu and tempeh ingredients, as well as chili sauce which are both favorite foods of Indonesian people. So that it can be snacked directly or become friends to eat rice.

Tempe Mercon Ingredients:

  • 1/2 board (200 grams) tempeh
  • 5 tofu
  • Enough oil for sauteing and frying

Chilli ingredients:

  • 15 red cayenne peppers
  • 10 green cayenne peppers
  • 4 shallots
  • 1 clove of garlic
  • 1 tsp shrimp paste
  • 1 small tomato
  • ½ teaspoon salt
  • ½ teaspoon powder broth
  • ½ teaspoon granulated sugar (optional)

Dyes:

  • 150 grams of flour
  • 1 stalk, chopped
  • 2 celery sticks, cut into pieces
  • 1 teaspoon salt
  • 1 teaspoon of broth powder
  • 200 ml of water

Puree:

  • 1 teaspoon coriander
  • 2 cm turmeric
  • 2 red onions
  • 1 clove of garlic

How to Make Mercon Tofu and Tempe:

  1. Blend the chilli ingredients then saute until fragrant and cooked, set aside for the filling material.
  2. Mix the dyes, then pour the water little by little while stirring until evenly mixed (the dough is not too thick and not too runny).
  3. Tempeh is cut into pieces about 1.5 cm, then split but not until broken and fill with chili sauce. Tofu split does not break and then fill it with sambal.
  4. Dip tempeh and tofu that has been filled in the dye, then fry in hot oil until cooked yellowish, remove and drain and serve.
