  • 3 red onions, thinly sliced
  • 2 cloves of garlic, thinly sliced

How to Make Steamed Basil Pepes:

  1. Beat the eggs, salt and chicken stock and add the shallots, garlic, leeks and lemon grass. Mix with tofu and basil leaves and stir well.
  2. Cut the banana leaf into a size of 20 cm, heat it or roast it briefly over the fire while sliding it so that the leaves are limp so that it doesn’t tear easily when cooked.
  3. Pour about 4 tablespoons of the mixture over the banana leaf pieces covered in a bay leaf. Put whole cayenne pepper on top then wrap and pin both ends with a stick.
  4. Steam for 25-30 minutes or until cooked. Can be served immediately or burned for a while to make it more fragrant.

Recipe for Making Pepes Tofu Bandung

Ingredients and Pepes:

  • 10 pieces of small yellow tofu Bandung or other types of tofu, mash
  • 1 egg
  • 2 scallions, sliced
  • 2 red chilies, sliced
  • 2 onions, sliced
  • 2 cloves of garlic, sliced
  • ½ teaspoon pepper
  • 1 teaspoon salt
  • ½ teaspoon coriander powder
  • ½ teaspoon of chicken stock
  • bay leaves and basil leaves to taste
  • 3 tablespoons of cooking oil (can be skipped for non-stick pan)
  • 2 cups of boiled water
  • 4 pieces of banana leaves, cut @ 15-20 cm and stick a stick to pin them

How to Make Boiled Tofu Pepes:

  1. Beat the eggs and mix all the spices and stir well. Enter the tofu that has been crushed, stir until well blended.
