Ingredients of Grilled Zucchini Ribbons

  1. You need of medium zucchini.
  2. You need of very thin sliced deli pepperoni.
  3. It’s of or more grape tomatoes.
  4. You need of wooden skewers, soaked in water 1 hour to prevent burning.
  5. You need of olive oil.
  6. Prepare of seasoned rice vinegar.
  7. Prepare of granulated garlic.
  8. You need of black pepper and salt to taste.
  9. You need of romano cheese, grated.
  10. It’s of Italian seasoning.

Grilled Zucchini Ribbons instructions

  1. Combine olive oil, rice vinegar, garlic, pepper salt, Italian seasoning and romano cheese in a small bowl, set aside.
  2. Make ribbon length slices of zucchini with a vegetable peeler.
  3. Place pieces of pepperoni on one side of zucchini ribbon to cover.
  4. Thread on skewers as shown below with 2 tomatoes to each skwer. Brush threaded skewers with olive oil mixture.
  5. Place on preheated grill over direct heat turning to cook all sides about 5 minutes.
  6. Serve as a side dish to almost any meal. They also make great appetizers!.
